DIAGNOSTICS
The most common failures by equipment type

What actually breaks on fryers, ranges, ice machines, dish machines, reach-ins, and walk-ins, and what a tech checks first.

Most equipment failures are not mysteries. Fryers usually go down on a tripped high-limit switch, a failed thermostat, or a worn heating element or igniter. Ranges and ovens most often lose a pilot, an igniter, a thermocouple, or a safety valve. Knowing the usual suspect helps you describe the symptom clearly and helps the tech arrive with the right part.

Refrigeration has its own patterns. Reach-ins and walk-ins that stop holding temperature are frequently victims of a dirty condenser coil, a failing door gasket, low refrigerant charge, or an iced-over evaporator. Ice machines fail on scale buildup, a bad water-inlet valve, or a dirty condenser, which is why water quality and regular cleaning matter so much in this region's hard water.

Dish machines tend to fail at the wash or drain pump, the heating element, or a clogged spray arm. Across every category, the single most preventable cause is a neglected condenser or filter. A tech will almost always check airflow and cleanliness before assuming the worst, because a warming cooler is a dirty coil far more often than it is a dead compressor.

THE SHORT ANSWER

Fryers: high-limit, thermostat, element. Ranges: igniter, thermocouple, valve. Refrigeration: dirty condenser, gasket, charge. Ice: scale and inlet valve. Dish: pump, element, spray arm. Cleanliness prevents a large share of all of it.
